Although not officially an Old World bread (invented in 1982) Cibatta has a very sliky smooth soft crumb and a crust that is not hard and crunchy but chewy. Our authentic version is worlds apart from what you have tasted in the grocery stores.
Here you have the choice between a loaf and "squareish" rolls large enough a nice sandwich.
